Home canning is a great way to enjoy your garden goodies all year long - but it’s important to do it safely to avoid botulism, a deadly form of food poisoning. Here are some tips to keep your recipes safe:

• Use the right equipment:
  • Boiling water canners for high-acid foods (e.g., fruits, jams)
  • Pressure canners for low-acid ones (e.g., meats, vegetables, soups)
• Use validated recipes: Use validated recipes that have been tested for safety
• Keep it clean: Wash hands and produce, and sanitize surfaces and equipment
• Check your jars: Use new lids, inspect jars and toss anything cracked or rusty
• Label and store: Date your jars and keep them in a cool, dry spot
• Refrigerate leftovers: Once opened, store leftovers in the fridge
